THE BUZZ AROUND WAYNE COUNTY LADYFINGERS by Ophelia White What You'll Need: 1 cup butter, room temp. 2 cup plain flour 2 tsp. Vanilla 8 Tbsp. sugar 1 ½ cup nuts, chopped Pinch of salt ½ box powdered sugar Mix butter, flour, sugar and vanilla until well blended. Add nuts and form into small finger links. Bake on a greased cookie sheet at 325 degrees for about 10-15 minutes. Let cool then roll in powdered sugar. Yum Yum! Sweet Potato Souffle w/ Pecan Topping by Linda Bullock What You'll Need: 2 cups sweet potatoes, mashed 1 cup milk (reduce if necessary) ¾ stick butter 1 ¼ cup sugar ½ tsp. Cinnamon ½ tsp. Nutmeg ¾ cup cornflakes, crushed ¾ stick butter ½ cup brown sugar ½ cup pecans, crushed Boil sweet potatoes until tender, then mash and measure. Add in milk ½ cup at a time, butter, sugar, cinnamon, and nutmeg. Mix until smooth and creamy. Pour into a casserole dish and top with the pecan topping. TOPPING: Melt remaining butter. Add in corn flakes crumbs, brown sugar and crushed pecans. Mix well to coat corn flakes and pecans. Spread topping mixture over top of potato mixture. Bake at 350 degrees for 20 minutes. Fixed your sweet tooth, you're welcome, ha! Shrimp Salad by Kimberly G. Jordan What You'll Need: 2 lbs. Shrimp 2 tsp. Salt, divided 2 tsp. Pepper, divided 1 cup mayonnaise Zest of 2 oranges 2 Tbsp. orange juice 1 tsp. White wine vinegar 1 sm. Red onion ¼ cup fresh dill 2 Tbsp. capers, drained Peel, devein and roast shrimp for 8-10 minutes at 400 degrees. Season with 1 teaspoon of salt and 1 teaspoon of pepper. SAUCE: In a large bowl mix mayonnaise, orange zest, orange juice, and vinegar, beat well. Add onion, fresh dill, capers and the last of the salt and pepper, mix well. Toss in shrimp. Chill and serve. Bon Appetit! BBQ Beef & Bean Burgers by Autumn Scott What You'll Need: 1 cup canned pinto beans, drained & rinsed 1 lb. lean ground beef 3 Tbsp of your favorite BBQ sauce 2 cloves of garlic, minced ¼ med onion, grated 4 shakes of Worcestershire sauce Cracked black pepper to taste 6 crusty rolls Lettuce & tomato for garnish Mush beans with the back of a fork in a deep bowl. Combine beans and beef with BBQ sauce, garlic, grated onion, pepper and Worcestershire sauce. Form mixture into 6 patties. Cook over outdoor grill or over medium-high heat on a griddle pan on stove top. Cook burgers for 6 minutes on each side. Serve on rolls with lettuce and tomato. Enjoy. Got a recipe that slaps?
