THE BUZZ AROUND WAYNE COUNTY MeatLoaf by Esther Hardin What You'll Need: 1 lb. ground beef 1 lb. ground turkey 1 cup quick-cooking oatmeal 1 med. onion, diced 2 eggs 3 Tblsp ketchup ½ med. bell pepper, diced 1 Tblsp mustard ½ tsp. Pepper 2 tsp. Morton Nature seasoning Combine all ingredients until blended thoroughly. Place in a loaf pan. Bake for 1 hour and 15 mins at 375 degrees. Enjoy. Cape Cod Salad by Kimberly G. Jordan What You'll Need: 6 cups arugula 1 cup dried cranberries 1 apple, peeled & chopped ½ cup walnuts 6 oz. blue cheese, crumbled 3 strips bacon, fried Sauce: 3 Tblsp apple cider vinegar 2 Tblsp Dijon mustard 2 Tblsp maple syrup 2 tsp. orange, grated ⅔ cup olive oil Mix salad greens, cranberries, apple and walnuts in a large bowl. Mix all sauce ingredients in a sep- arate bowl. Pour over salad greens; toss together. Top with blue cheese and bacon. Serve immediately. Bon Appetit! Cabbage Casserole by Carolyn Cobb What You'll Need: 1 ½ lbs. Lean ground beef ½ cup onion, chopped 14.5-oz. can diced tomatoes 1 teaspoon garlic powder 1 teaspoon salt ¾ cup cheddar cheese, shredded ½ cup of bell pepper, chopped Cook ground beef in a large skillet. Put in onion, green peppers and cook until the meat is no longer pink. Drain off fat; stir in tomatoes, salt and garlic powder. Simmer, uncovered for 10 minutes, stir- ring frequently. Cut cabbage into wedges in salted boiling water for 10 minutes. Drain cabbage, put in a 9-inch baking dish. Pour ground beef mixture and around cabbage wedges. Bake at 350 degrees for 20-25 minutes. Sprinkle cheese over the casserole. Serves 6. Bon Appetit! SPINACH CHEESE CHEESE SQUARES by Autumn Scott What You'll Need: 4 Tblsp Butter 3 eggs 1 cup of flour 1 cup of milk 1 teaspoon salt 1 teaspoon baking powder 1 med. Onion, grated 2 pkgs. Frozen spinach, chopped, thawed & well drained 1 lb. sharp cheddar cheese, grated Preheat the oven to 350 degrees. Melt butter in a 9 x 13-inch baking dish in the oven; remove. In a mix- ing bowl, beat eggs and add flour, milk, salt and baking powder; mix well. Add onion, spinach and cheese (may run spinach through a food processor for a better tex- ture). Pour into the pan and bake for 35 minutes. Cool thoroughly; cut in squares. Can be served hot or cold. Enjoy! Got a recipe that slaps?
