18 THE BUZZ AROUND WAYNE COUNTY APRIL 2026 Hummingbird Cake by Shirley Graves What you'll need: 3 cups self rising flour 2 cups sugar 1 teaspoon cinnamon 3 eggs, beaten 1 ½ cup oil 1 ½ teaspoon vanilla 1 (8 oz) can crushed pineapple, undrained 2 cups pecans, chopped 2 cups bananas, mashed Icing: 1 (8 oz) pkg. cream cheese, softened ½ cup margarine 1 box powdered sugar 1 teaspoon vanilla Combine flour, sugar and cinnamon together. Add eggs and oil. Do not beat. Stir in vanilla, pineapple, 1 cup pecans and the bananas. Bake in layered pans for 25-30 minutes at 350 de- grees. Icing: Frost with icing and sprinkle with remaining 1 cup nuts. Icing may be doubled as it will cover layers and sides of cake. Enjoy! Rolled Chicken Breasts by Ernestine W. Wooten What you'll need: 6 chicken breasts, skinned & boned Salt as desired 1 (6oz) pkg. sliced swiss cheese 6 thin slices of ham ¼ cup flour ½ cup water 2 chicken bouillon cubes 1 (3oz) can sliced mushrooms 1 can cheddar cheese soup/mix 1 can water 2 tablespoons flour Toasted almonds Place chicken breasts, bone side up, on cutting board; pound chicken lightly with wooden mallet to make ¼ inch thick cutlets, working from center out. Sprinkle with salt. Place a cheese slice and a ham slice on each piece of chicken. Tuck in sides, roll and fasten well. Coat with flour. Brown chicken in butter. Combine water, bouillon cubes, mushrooms and cheddar cheese soup in same skillet and heat. Pour over chick- en; cover and bake in preheated oven at 350 for 1 ¼ hours or until tender. Garnish with almonds. Serves 6. Good eats! Spicy Potato Soup by Sadie Bond What you'll need: 1 lb. ground beef ½ stick butter 4 cups potatoes, cut in ½ inch cubes 1 small onion, chopped 3 (8oz) cans tomato sauce 4 cups water 2 teaspoons salt 2 teaspoons black pepper ½ teaspoon hot pepper sauce Saute onions in butter. Brown hamburger and drain well. Add potatoes, tomato sauce, water, salt, pepper, and hot sauce. Simmer over low heat at least 1 ½ hours. Serve with your favorite warm bread or crackers. Bon Appetit. Cape Cod Salad by Kimberly G. Jordan What you'll need: 6 cups of Arugula 1 cup Dried Cranberries 1 apple, peeled & chopped ½ cup Walnuts 6 oz. blue cheese, crumbled 3 strips bacon, fried Sauce: 3 tablespoons, apple cider vinegar 2 tablespoons, Dijon mustard 2 tablespoons, maple syrup 2 teaspoons, orange, grated 2/3 cup olive oil salt and pepper to taste Mix salad greens, cranberries, apple and wal- nuts in a large bowl. Mix all sauce ingredients in a separate bowl. Pour over salad greens; toss together. Top with blue cheese and bacon. Serve immediately and ENJOY! Got a recipe that slaps?
