RECIPES Cheeseburger Pie Ingredients: 1 Pie crust 1 lb Ground beef 1 small finely chopped onion 1 tsp garlic powder Salt and pepper to taste 1 tbsp Worcestershire sauce ¼ cup Ketchup 2 tablespoons Mustard (optional) 2 cups shredded Cheddar cheese 2 large eggs: ½ cup milk Instructions: Preheat your oven to 375°F (190°C). Place the pie crust into a 9-inch pie dish, pressing it into the bottom and up the sides. Set aside. In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and the onion is softened. Drain any excess fat. Stir in the garlic powder, salt, pepper, Worces- tershire sauce, ketchup, and mustard (if using). Cook for another 2-3 minutes to combine the flavors. Spoon the beef mixture into the prepared pie crust, spreading it out evenly. In a medium bowl, whisk together the eggs and milk. Pour this mixture over the beef in the pie crust. Top the pie with the shredded cheddar cheese, spreading it out evenly. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the crust is golden brown. Let the pie cool slightly before slicing. Funeral Potatoes Ingredients 2 lbs hash browns 1/2 cup butter 2 (10 3/4 ounce) cans condensed cream of chicken soup 1 pint sour cream 1/2 teaspoon salt 3/4 cup onion, chopped 1 tablespoon butter 2 cups longhorn cheese, grated, firmly packed 1 1/2 cups corn flakes, crushed 4 tablespoons butter, melted Directions Saute onions in 1 tablespoon butter until trans- lucent. Mix all ingredients, except cornflakes and 4 tablespoons butter, together. Put potato mixture into a 9x13 inch baking pan. Combine cornflakes and butter, and sprinkle evenly over top of casserole. Bake at 350 degrees F for 40-50 minutes or until heated and bubbly. Let cool 10 minutes before serving. Baked Chicken Chimichangas Ingredients 8oz pkg. cream cheese 8oz. Pepperjack cheese, shredded 1 1/2 Tbsp. taco seasoning 1 lb. cooked chicken, shredded 8 flour tortillas cooking spray shredded cheddar cheese green onions, for garnish sour cream salsa Instructions: Stir together cream cheese, Pepperjack cheese and taco seasoning. Fold in chicken. Divide among flour tortillas. Tuck in sides, and roll up each tortilla. Lay seam side down in a sprayed 9x13" baking dish. Spray tops of tortillas with cooking spray. Bake at 350 for 15 minutes. Turn chimi's over, and bake an additional 15 minutes. Serve with cheddar cheese, green onions, sour cream, and salsa. Baked Cajun Catfish INGREDIENTS 4 catfish fillets 2 tbsp olive oil 1 tbsp Cajun seasoning 1/2 tsp paprika 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp dried thyme 1/4 tsp dried oregano Salt and black pepper, to taste Lemon wedges (for serving) INSTRUCTIONS 1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it. 2. Season the Catfish: In a small bowl, mix to- gether the Cajun seasoning, paprika, garlic pow- der, onion powder, dried thyme, dried oregano, salt, and black pepper. Brush the catfish fillets with olive oil on both sides. Rub the seasoning mixture evenly over the fillets. 3. Bake: Place the seasoned catfish fillets on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
